Work is crazy, life is crazy and I have lost the whole month of April... or so it seems! Here is a quick recap in pictures...
This was my "go-to" recipe this month for meals that I provided the dessert, school functions, church functions and to satisfy my sweet tooth!
And these yummy "chattels" were used as Easter treats in baggies!
The beach is my place to go and "rest!" This was my view the first night we were there. It was a good trip for my soul and the next several pictures are from my time away from reality. : )
My breakfast before heading out to the beach each day was fresh fruit with low-carb vanilla yogurt mixed in. I could live off of this mix!
Dinner one night at Cafe Thirty-A... I highly suggest this as a "splurge" place to eat while at the beach!
Wood-Oven Roasted Grouper with black beans, sweet corn, tomatillos and roasted red peppers in a poblano sauce...
Banana Beignets with caramel sauce and homemade Macadamia Nut ice cream...
Warm Rum Raisin/Apple Bread Pudding with Cinnamon Ice Cream and a Kentucky Bourbon Sauce...
I detoured through Pensacola, Florida, to visit with some friends and we had lunch downtown on the bay. One of my favorite places in Pensacola. Way off in the distance is the new Pensacola minor league baseball stadium they are building that overlooks the bay. A fun city to visit!
We had lunch at Jaco's Bayfront Bar & Grille. It was amazing!
I had the Southwestern salad...
On my way back to Oxford, I made a stop in Prattville to visit with my grandparents and great-aunt. It was Thursday and they always go eat at Jim's Restaurant on this day. It is good, home-cooking so I was happy to tag along!
Chicken and dressing, squash, black-eyes peas, cabbage and homemade cornbread sticks...
And finally, I made a stop at Dreamcakes Bakery in Homewood to pick up a couple of cupcakes to share with friends back home over coffee.
I found some old journals from college while I was cleaning out closets one weekend. Loved reading through them... Lots of good laughs but more importantly, the journey of my life as I've grown as a young woman in Christ.
Cleaned out lots of books, and other things I don't "need" to live my daily life. It felt so good to get rid of "things" and donate them to others who can use them.
Loving my little bottles of Diet Mountain Dews...
And loving this new little addition... One of our coaches and his wife are the proud parents of Baby C! Love watching our school family grow with new additions.
Well that wraps up most of the month. I won't bore you with the job tasks and mundane everyday household tasks. I will tell you that I am loving the business of this time of the year and am looking forward to the next several months.
